Made from Chardonnay from the Cotes des Blancs of which a third of the parcels are situated in Avize and Cremant and two-thirds from Oger and Le Mesnil-sur-Oger produced in the great 2002 year. The wine ferments in stainless steel and a third of the wine does not undergo malolactic fermentation in order to give the wine a sharp tension for many years to come. A 7g/l dosage was added after the wine sat for ten years on the lees. The Champagne has an intense and bright golden color and a delicate effervescence. The aroma is the epitome of Chardonnay complexity with notes of acacia honey and slightly grille dried fruit, almond, apricot and barley making it buttery and inviting with its vein of candied ginger which is a preview of the freshness that will seduce the palate. Sapidity upholds the mouthfeel with a wrapping length and great finesse, while a creaminess reveals itself minute after minute together with a precision typical of the terroir that is displayed with pride. This is a Champagne that will continue to surprise for years to come.
