Benjamin Zidarich's winery is an authentic work of art and seems like an underground cathedral, carved in karstic stone with stone pillars supporting its roof. This is where his Vitovska (a local white grape) ferments in its skins in big barrels. The result is a wine with great character, an antique gold, opalescent color and a floral and mineral bouquet. There are notes of wheat, medlar and carnation and smoked scents in the background. The taste is almost salty, with a subtle and long finish.
