Casata Monfort is an historic winery, in Lavis, where the initial phases of the winemaking process take place. The latter one occur at Maso Cantanghel, an ancient fort dating back to the Hapsburg era that belongs to the family of Lorenzo Simoni. Monfort Brut, Brut Rosé and Brut Riserva are the Trentodoc wines they make. The Chardonnay grapes in their non-vintage brut, 15,000 bottles produced, is fermented in part in steel and in part in wood. It is bottled in the spring and sits 24 months on the lees.
The color is a clear yellow with golden reflections and a subtle and persistent bead. The wrapping aroma opens with floral and fruity scents: peonies, hawthorn, Renetta apple, tangerine and medlar which usher in notes of warm cookies and bread baked in a wood oven. The mouthfeel is immediate and straightforward, agile yet energetic with a long acidic-savory streak.
