A blend of 85% Pinot Noir and 15% Chardonnay, exclusively come from the village of Ambonnay, which epitomizes Marie-Noëlle Ledru’s Champagne production. Although it is indicated as an Extra Brut, after sitting for 48 months on the lees this cuvee – which is composed of 50% reserve wines from the previous two harvests – practically has no dosage at all. The wine is fermented in stainless steel under controlled temperatures and undergoes malolactic fermentation to bring out all the boldness and richness of the terroir of Ambonnay.
The Champagne has intense golden reflections and an inebriating and winey bouquet with notes of gooseberry, bergamot, ginger, crispy apple peel, thyme and white tea. The mouthfeel is structured, textured and bold with a sharp tension and rigorously saline notes and a vigor that sets the pace making it broad and lively with a distinct persistence.
