For the past 140 years this agricultural institute founded by the Hapsburgs has been a reference point for enologists, winemakers and researchers from all over the world. This Riserva, the only sparkling wine they make, is a dutiful homage to Mach, the institute’s ‘Founding Father’. The vineyard used is in Maso Togn, 700m above sea level, on the Faedo foothill. The wine is 70% Chardonnay and 30% Pinot Noir and blended under the supervision of winemaker Enrico Paternoster. Fermentation takes place without the skins and is done in part in steel and in part in oak barriques, with tirage in May to then sit on the lees for three years.
The color is a bright, golden-yellow with a very fine and thick bead creating reflections. The aroma is a delicate intertwining of nuances from the two grapes and sitting on the lees. There is yellow plum, nectarine, golden apple, raspberry and cherry together with hazelnut and bread crust. The mouthfeel is soft and structured, with a savory and fresh flavor that create a good balance and exquisite pleasure. Vivacious and appetizing, intense and persistent, this bubbly leaves a long aftertaste of ripe fruit and minerality.
