A complex and rich Champagne, a blend of 50% Grand Cru Chouilly Chardonnay and 50% Grand Cru Aÿ Pinot Noir from vines that are over 40 years old, made with the approach of vinifying each parcel separately. The base wines are contained in acuvée perpetuelle using only the best vintages (including 1995, ’96, ’99, 2002, ’04, ’06, ’07, ’08 and ’09) that define the wine’s original complexity, one composed of the union between the vital and mineral boldness of the fruit with an intense and saline structure, in an excellent balance between acidity and maturity. After siting for some seven years on the lees a dosage of around 7g/l is added.
A vibrant aromatic profile dominated by notes of citron and candied ginger, daffodil and linden and acacia honey, white currant and balsamic nuances on a background of almond and hazelnut cookies. The surprising mouthfeel is broad and complex, with a ripe and almost meaty texture that opens with the energy of concentrated fruit and salinity, with a taut and deep finish and elegant effervescence.
