A single-grape Sauvignon Blanc, this has a pale, straw color with an excellent luminosity and light body. The bouquet has a secondary nature with clear and refined post-fermentation notes. There are scents of lychees, kiwi and medlar with a note that recalls daisies or the sweetness of white-petal flowers. This is a bouquet that is not and does not seek to be complex and most of all the sensation from maturing in wood is not invasive. The fresh-soft mouthfeel has great balance with a saline finish. The only shortcoming is the persistence.
Since most of this wine is exported to Japan, it comes natural to pair it with sushi, but if you don’t like raw fish have it with shellfish okonomiyaki.
