This is a special selection, produced in a limited, almost ‘confidential’ quantity and is perhaps the wine that best exemplifies the spirit of the winery. Its connection with the past is obvious. It is called ‘Salici’ (willows) to recall a time when vine shoots were secured to trellises with the tree’s long, flexible leaves. The winemaking method employed is also old with an ‘ancestral’ secondary fermentation in the bottle, an old practice carried out with modern knowledge.
The effervescence makes the wine seem as if it is trying to escape the prison of the bottle when it is opened. With breathing any initial reductive scents left over from secondary fermentation in the bottle quickly clean up and reveal a background of exuberant red fruit, cherry and ‘durone’ cherry, together with an intriguing minerality and spiciness. The mouthfeel is bracing, very fresh and dry and has great body.
An excellent wine to pair with the opulent cuisine of Parma and more.
