Made with only Pinot Noir grapes from vines that are over 25 years old, this cuvee is 80% composed of grapes from the 2010 harvest and 20% from the 2009 one. Like all Guy de Forez Champagnes, the base wines did not undergo malolactic fermentation and after being disgorged no sweet dosage was added, making it a Pas Dosé. This is a meaty Champagne which is evident already in its bouquet with its notes of Queen Claudia plums, hazelnut, candied ginger, apple preserves, bergamot tea, toasted bread and licorice root. The mouthfeel has a bold attack with an austere energy in which a vigorous structure and brilliant acidity distinguish a texture that ends with an opulent and grapey finish.
