A blend of 38% Merlot, 29% Syrah, 17% Cabernet Sauvignon and 16% Petit Verdot selected first on the vine and then again in the winery. Gravity is used to press the grapes and, after cold maceration for 5-8 days, the wine is made under controlled temperatures with the use of select yeasts and subject to frequent paddling. The wine then ages for 16 months in French-oak barriques half of which are new wood.
The color is a lovely intense ruby that turns purple on the edge while the bouquet opens with intriguing scents of ripe blueberry and current followed by one of cacao and a mentholated note while in the finish you can sense black pepper and delicate vanilla tones. The flavors are a confirmation of the aromas and the fresh mouthfeel has a medium-body with silky and well-integrated tannins. Overall this is elegant and balanced with a long persistence.
Pair with brazed or grilled meats cooked with fresh aromatic herbs and spices.
