Made from Verdicchio grapes with maceration lasting only a few days to then mature in stainless steel vats with repeated paddling. The wine is unfiltered and has an ochre-straw color with grey-green reflections that is imperceptibly veiled. The bouquet has the varietal’s typical fennel aroma that is direct and very pure and is accompanied by notes of quince apple, sweet almond and a hint of bread crust. The mouthfeel is incredibly straightforward and while it has a rich consistency it is kept lively by a distinct salinity that refreshes the light and pleasing tannins at the center of the mouth. Despite the maceration, the finish is not excessively bitter and, in fact, there is a return of the varietal’s typical notes. Given the style this is quite fine and should not be consumed cold. Not to be missed.
