A 100% Chardonnay Blanc de Blancs from the Grand Cru village of Avize that is made in stainless steel with slow fermentation and no malolactic fermentation and then matured in cement vats before being bottled in the spring of 2007. The wine was disgorged ten years later with a dosage of 5g/l.
The wine has a bright, golden-straw color made splendid by the effervescence and the bouquet opens with floral notes of lemon and elder followed by exotic citrus notes between lime and Mandarin orange together with a juicy vein of pineapple and green apple and nuances of honey with iodine sensations. The mouthfeel is bold and full of personality with a great balance that unites saline finesse with a citrus verticality and a distinct texture. The persistence has a vibrant freshness and a creamy body with nuances of dried fruit that in the finish become those of almond and candied citrus. The wine has a distinct propensity to age
