A vintage blanc de blancs made from Chardonnay from all the Grand Cru villages of Cotes des Blancs – Avize, Chouilly, Cramant, Oger and Le Mesnil-sur-Oger – and Premier Cru villages of Bergéres-les-Vertus and Vertus, with 10% of the wines aging for two months in barriques to then age further in stainless steel vats before bottling. The wine then sits on the lees for ten years in the cellars of Saint-Nicalse, an abbey on the ruins of which hosts Taittiner’s headquarters today. Dégorgement takes place by hand alla volée after rémuage which is also done by hand, with a dosage of around 9g/l. This Cuvée de Prestige is one of the most loved among wine lovers and experts for its capacity to bring together two qualities which are not frequently associated with each other, boldness and finesse, to which is added an amazing propensity to evolve and age long. The precise style is founded on the freshness and finesse of its components, with a note of iodine of oyster shell and graphite, light toasty notes of dried fruit together with a buttery vein and sensations of lemon pudding as well as a balsamic hint. The mouthfeel is wrapping, limpid and precise with a tension of grapefruit that nicely shifts to tones of Mirabella and honey brioche in the meaty, textured and yet savory and refined finish. As Pierre-Emmanuel Taittinger said: “This is a Champagne that hold the secret to eternal youth”.
