A blend of 75% Semillon and 25% botrytized Sauvignon (attacked by noble rot). The wine ferments and matures in new barriques for 20 months and has an extremely luminous, straw color with golden reflections. The bouquet has a superlative purity with tones of the 2015 harvest that lean toward fruit: lemon cream, tangerine peel, pineapple, mango, apricot and vanilla. The mouthfeel plays on freshness with is sweetness magically incorporated into the structure while the flavor reiterates the fruit component and the fatty aftertaste is full of vanilla without any bitterness. If you’re looking for mushrooms and saffron then you’ll have to wait another 15 years or so.
According to experts of this wine, 2015 is the best vintage of the new millennium together with 2001 and 2009. For us it may lack a tad of fattiness but the level of purity in this wine is its point of reference. For once leave aside the herbal cheeses and foie gras and pair this with creamed squash, a saffron risotto or shellfish with cream and ginger. After you have opened a young Yquem it will last at least for a couple of weeks.
