On the back label is written: “This Champagne is an expression of the Maison’s style that first of all begins with perfectly cultivated vineyards. The quality of the grapes, the precision of the blending and the long aging in the cellar allow us to produce a Champagne without any filtration making it the most correct Champenoise expression.” This blend of Grand Cru grapes from Ambonnay, 70%Pinot Noir and 30% Chardonnay, spent 106 months in the cellar and was disgorged in May 2016 with a dosage of around 2g/l. It has a broad and rich aroma with floral, chalky and smoky nuances in a bouquet dominated by ripe apple and candied lemon. The mouthfeel is creamy and rich in texture, with a bold structure upheld by notes of dried fruit, ginger cookies and white pepper and with a smoky finish. Opulent and sinuous, this has a propensity to evolve that already promises to astound.
