Made from only Rolle grapes and fermented and matured on the lees in wood for ten months. The wine has a luminous, yellow color with citron reflections and an open and distinct aroma with notes of sweet almond, candied citrus, mint and nettles. The attack of the mouthfeel is slightly sweet and oily while the center of the palate it is tannic. The finish has notes of vanilla pudding and anise and you can “sense” even a pleasing (and very measured) volatile acidity which underscores the balsamic sensation without being in any way rustic.
Think of this as a cross between a Condrieu and a Vermentino di Gallura. A creamy white, very tight and compact that demands a lot from those who drinks it - if you only like dry and tart whites then this is not for you – and from what it is paired with. Try this with first courses and oriental-style fish. Or even with a very peppery carbonara. Drink it cold ad don’t let it age.
