Thanks to the Consorzio Tutela Vini di Romagna, the Caviro-Cevico joint venture was allowed to use the Novebolle trademark already with this vintage. Bolé is a white sparkling wine that is 95% Trebbiano and 5% Famoso. In the future, the percentages in the blend will change in accordance to regulations. The effervescence is achieved using the Martinotti Method with secondary fermentation slowly taking place in an autoclave at a temperature of between 15 and 17°C for 30 days.
The wine has a yellow-green color and a subtle effervescence. The bouquet plays on nuances of fruit, between white peach and unripe pineapple, grated apple and Williams pear, on a background of white tea and spring wild flowers. The mouthfeel is natural, light and dry with a bracing acidity and tropical nuances of green mango and passion fruit that are rollicking yet controlled while the finish is a slightly saline.
The quality/price ration is targeted for the young consumer, with a hint of glamour in its habillage.
