Made from only Cannonau grapes with the wine macerating on the skins for ten days, after which 50% is transferred to large barrels and 50% into stainless steel vats to mature for a year. The two wines are then blended back together and continues to mature for six months in steel vats before bottling. At the end, the wine reaches the market 26 months after the grapes were harvested. Select yeasts are not used in the miniscule, 40 square-meter winery.
The wine has a very limpid, cherry-red color that is atypical compared to other Cannonau, with no overripe tonalities but bright and lively reflections. The aromas are almost sweet with notes of red fruit and wild berries along with some balsamic hints. The consistent mouthfeel is very lively and fresh, enticing sip after sip, with wonderful tannins and a long and distinct finish that is between dry and fruity. Hats off, I liked this a lot.
