A blend of 45% Chardonnay, 50% Pinot Noir and 5% Pinot Meunier. The 15% of red wine is from the villages of Vertus and Vincelles and give the Champagne its unusual, intriguing and intense carmine color with rusty reflections that recalls a romantic autumn sunset. After almost ten years in the cellar, between aging and on the lees and in the bottle, this Champagne has a truly autumnal aromatic profile with notes of blood orange and pomegranate, dog rose and humus, red currant and a delicate pepper sensation with an almost balsamic touch. The mouthfeel is full and winey, with fruity notes of apple peel, persimmon and apricot short crust to then delicately close with a taut and fragrant finish distinguished by a fumé and saline touch. An authentic surprise that should be reserved daring gourmand pairing with important meat dishes, first among them pigeon.
