Made from only Chardonnay grapes grown in the Grand Cru village of Avize. After being vinified in stainless steel, the wine sat for 42 months on the lees and was disgorged on October 19, 2015 without the addition of any dosage or sulfites. The name refers to the subsoil of Cotes des Blancs where the marl lime layer still has marine fossils of belemnites, cephalopod mollusks with a cone-shaped shell that existed in the Cretaceous period, 65 million years ago. The most important characteristic of this dry and precise Champagne is its persistent and refreshing drinkability with an iodine marine note that sharpens the mouthfeel. This bottle was based on the 2011 harvest with 30% made using vins de reserve. It has a fresh and almost mentholated aromatic profile with notes of white flowers, chamomile and fern, lime and sea bluebells. The sharp mouthfeel is so cutting it is almost chalky but for those who love their Champagne to have great tension this is a remarkable find, even if it is not destined to age long given the absence of sulfites.
