The first harvest of organic grapes saw them washed and dried before using the Metodo Ca’ del Bosco before being pressed. A blend of 55% Chardonnay from 19 different vineyards, 25% Pinot Bianco from two vineyards and 20% Pinot Nero from eight different vineyards that after eight years and seven months sitting in the lees was disgorged in the absence of oxygen without the addition of any sugar through liqueur d’expedition. For the most part 2008 was a cool year but this changed in the weeks before harvest when the sun and heat allowed the grapes to fully ripen without losing any of their acidity. The wine has a balance between tension and fullness and the symphony between the ripeness of the fruit, the acidity of from the citrus notes, the delicacy of the texture and structure are key to the expansion of the aromas and flavors. There are notes that are almost mentholated together with those of lime, fresh almond and laurel which accompany a chalky salinity and floral nuances. The progression is dynamic with a lively vivacity yet composed and harmonious. All this opens the door to surprising possibilities of evolution for which one need only wait.
