EmergentePastry Centrosud arriva a Roma

The best young pastry chefs from the Central and Southern regions of Italy will compete at The First Dolce Hotel in Rome on April 21st. The best three, along with the winners from the North, will compete for the final.

The professional pastry of the restaurant and hotel is living a new season definitely happy. This sector, in the context of a gastronomic restaurant or a luxury hotel, represents a growing source of pride, a distinctive sign of the overall quality of the structure, an attractor of media attention, an object of spectacle and aesthetic pride.

Young professionals sometimes create true masterpieces and for this reason they are increasingly sought after by high-profile structures. A specialization that is not easy because - much more than in the kitchen - it is indispensable an extreme professional rigor, a methodical preparation, a millimetric precision. Among other things, it is a sector in which women often manage to emerge and often stand out for their determination and creativity.

All these considerations led Witaly to conceive Emergente Pastry, to complete the "Emergente" series (Chef, Pizza, Room, Reception), a competition format that they have been successfully implementing for some time now.

There will be two events: Emergente Pastry Centrosud on April 21st in Rome while in November, at Irca Academy in Gallarate, it will be the turn of the North. The candidates, as usual, are all young professionals who will have to realize their pastry works in front of a jury of well-known Pastry Masters and journalists. The first three of each of the two selections will be admitted to the Final which will take place at the beginning of 2023.

These are the competitors: Mariasole Martella of Imàgo Restaurant* at Hotel Hassler in Rome, Fabio Capasso of Don Alfonso* at San Barbato Resort Spa & Golf *****L in Lavello (PZ), Giacomo Bresciani of Giglio* in Lucca, Lorenzo Pisapia of Officina dei Sapori in Gubbio (PG), Marco Nuzzo of Casamatta* Restaurant at Vinilia Wine&Resort in Manduria (TA), Raffaele Angotti of Abbruzzino* Restaurant in Cava - Cuculera Nobile (CZ), Federico Marrone of Da Lincosta Restaurant in L'Aquila, Erika Torres of Giulia Restaurant in Rome, Ester Sportelli of Biafora Resort & Spa in San Giovanni in Fiore (CS).

The first edition took place in January 2019 and the title "Emergente Pastry Chef 2019" went to Elisa Zanelli then in force at Ristorante Rose Salò (BS). After the interruption for the pandemic, the second edition in attendance was held last November 2021 at Irca Academy in Gallarate, an appointment that saw the triumph of another young woman: Debora Vella formerly Dolce Locanda Perbellini Verona and recently head pastrychef at Madonnina del Pescatore**.
