The sound of irreverence

Fads, multinationals and cool restaurants are seeking to distort the spirit of Italia craft beer, in the name of business is business, trying to make it more and more like those slick wines the consumption of which is on the constant decline. Craft beer will be saved from this decline thanks to the small brewfirms, micro-brewers rooted in the land and run by irreverent minds like that, for example, of Stefano Allera. He is the former deux ex machina at Behop, a distributor specialized in top-quality, unique and sought after beers, who today heads the Irreverence project. The project does not have a brewery, a physical space, only ideas, visions of the heart and mind which, case by case, become a reality through partnerships with other breweries.

Stefano is like a modern Ulysses who arrives at a brewery and, together with its owner, seeks to create something new and different, always with great technical expertise and always aimed at achieving extreme drinkability. Drink it or leaveit is his motto and if you don’t leave it, then just drink it. This is the Genius of beer, the hidden spirit of a beverage that is thousands of years old and must first of all quench hearts and souls.

The line of products is broad and here we focus on Black Silent, the group’s Stout, which is produced in collaboration with the Endorama brewery of Grassobbio, in the province of Bergamo. Its style is that of an immediate or, if you prefer, simple Stout but what makes it unique in the Irreverence line is that it is not bottled but only sold on tap in select pubs throughout Italy. This will be a discovery but, then again, that is what beer is all about.
