A blend of 55% Pinot Noir (27% red wine) and 45% Chardonnay the proportion of which is not set in stone but will vary depending on the traits of the harvest. The wine received a 5.5/l dosage when it was disgorged after sitting for almost ten years on the lees. In the glass, the wine does not have a pink but rather a lucent, coppery color without any of the levity that often accompanies a rosé. The bouquet has scents of rhubarb and cardamom, pink grapefruit, mallow, dog rose, rosemary and incense, together with nuances of raspberry compote and hints of pink pepper and cinchona. The mouthfeel is firm and structured with a three-dimensional vibration that adds a silky sensuality to the grapey element and thus balances its authoritarian character. This a polar construction in which the evident maturity of the fruit is channeled into a squared-off structure to then be lightened by the crispiness of the red fruit in the finish which is filled with refreshing sensations of chinotto, the fruit of the myrtle-leaved orange tree.
