But what kind of Carso do we want in 2050?

Speech by Matej Skerlj, president of the Associazione dei viticoltori del Carso
The Karst is much more than a geographical territory: it is a veritable treasure chest of cultural treasures, telling millennia-old stories and traditions handed down from generation to generation. It is our duty to preserve this wealth and ensure that it is passed on to future generations, so that they can continue to enjoy such a unique and fascinating heritage.
However, in order to achieve this goal, it is necessary to act steadily and consistently over time. We cannot allow the Karst to be neglected because of self-interest. We need to put the needs of this extraordinary land first, working in synergy with restaurateurs, who are an important vehicle for publicizing its traditional and unique cuisine.
Speech by Walter Filiputti, president of the FVG Via dei Sapori Consortium.
Eighty percent of the vineyards on the Karst are native varieties, a true oenological treasure. In Friuli-Venezia Giulia, unfortunately, some of the authenticity has been lost, with some varieties no longer existing on the market. However, in the Kras, this authenticity is still managed to be maintained, and producers are fortunate to be able to compete in the market because of this distinctive characteristic.
It is essential that producers make more radical choices related to the territory, closely linking the wine and the winery to the identity of the place. I am aware that there are varieties that can be difficult to place precisely in the territory, but it is precisely in these challenges that new opportunities are hidden. It is necessary to find the right balance between tradition and innovation, while preserving the distinctiveness of the territory and its history.
Speech by Avguštin Devetak, Lokanda Devetak
The promotion of Vitovska by Karst restaurateurs is still insufficient: in 50% of the restaurants in the area it is not possible to taste this indigenous wine. The restaurateurs do not seem confident in presenting the peculiarities of the autochthonous, and this uncertainty must be overcome. It is essential to be determined and strong in promoting Vitovska and other varieties of the area.
To achieve this goal, greater synergy between hosts and winemakers is needed. It is essential to create a common front to enhance the excellence of the Karst and ensure an authentic experience for tourists visiting the region. We do not necessarily need to increase the number of facilities, but rather refine the existing ones, making them better able to welcome visitors. Quality is the cornerstone of long-term success.
