Produced almost every year using the classic Xarel-lo and Macabeu grapes, with a 4% addition of Parallada. Xarel-lo has always dominated the blend and here is 54%. All the work is done by hand and disgorgement takes place in the estate’s cellars where the wine has sat on the lees for at least 30 months, compared to the average of six months for a Cava. Here corks are used as opposed to the crown caps others, even in Champagne, use. Terrers is the ideal wine to understand how they work at Recaredo and what Cava means in these parts. The wine has a rich and bold golden color and Mediterranean notes that are subtlety elegant. This is a wine that goes well with a meal but is also great as an aperitif and is ideal to drink at Barcelona’s wine bars or in the splendid garden at Mugaritz, the iconic restaurant that has always been among the top ten in San Pellegrino’s classic list of the world’s 50 best. Creamy and rocky, deep and savory with a citrusy sensation and a playful and suave floral one that is completed with a background of hazelnut and crispy and flavorful brioche. If goes down quickly but its aroma lingers in the glass and the aftertaste has its own way of refreshing you that is passionate yet light and delicate.
