A blend of 55% Pinot Noir, 30% Chardonnay and 15% Pinot Meunier that is fermented in wood without malolactic fermentation to then age for seven years on the lees before receiving a dosage of 4g/l. In the glass its brilliant profile is one of precision and attention to detail, all within a dimension of iodine and chalk with vibrant and fresh aromas of ginger and green apple with a three-dimensional sensation of freshly toasted almond and barley. The mouthfeel is vital and defined with an impressive progression which seems to leave extracts on the palate even if it is all quenching tension. New to the market, it will undoubtedly surprise us with how it evolves with age.
