The base, of course, is Nerello Mascalese, the typical red grape variety of the Etnean area, where it has been cultivated since time immemorial; the name refers to the County of Mascali, the probable center of origin or at least of spread of the cultivar. The first mentions of a Nerello Mascalese cultivated on the slopes of Etna are from 1839 by Abbot Geremia.
To this Nerello (minimum 80%) as for local reds, 20% Nerello Cappuccio (also known as Nerello Mantellato) may be added. Also permitted is the addition, up to a maximum of 10% of the total, of white, non-aromatic grape varieties, which almost always means Carricante.
The geographical area involved in the production of Rosati is that of the DOC, which takes the form of a semicircle around the volcano, open on the western slope. The nature of the soil is closely linked to the volcanic matrix; the soil was formed mainly by the accumulation and subsequent alteration of various eruptive materials such as ash, sand, lapilli and pumice.
