Made with Sagrantino grapes, the wine sits for two and a half months in the lees, ages for 24 months and is produced in limited quantity, only 788 bottles. The aroma is not that sweet but measured and leaning towards nuances of cinchona and dried fruit, brown sugar and a touch of brine. The mouthfeel has body and is dynamic with a nice sweet-salty contrast. While it may go against the ‘rules’ of pairing, this would go very well with succulent, grilled lamb chops.
