The Catarratto grapes for this wine come from vines that are over 40 years old and trained Greek-alberello style making them look somewhat like a candelabra. The wine is fermented in wood and sits sur lie for eight months. The wine has bright, cold straw-yellow color and a complex aroma with notes of anise and fresh medlar along with a refreshing one of mallow. Complexity and freshness make the flavor quite impressive with boisé notes that remain at the back of the nose. A bold yet very drinkable wine with an incredible finish. This is a wine I would dare define as neo-classic, the result of wisdom and science applied to tradition.
