From cultivar carolea 50%, cassanese 50% olive varieties. Continuous cycle production system. Medium fruity. It has a beautiful intense limpid golden yellow color with delicate green hues. Its aroma is fine and delicate, endowed with hints of freshly mown grass, enriched by notes of ripe tomato and fragrant notes of basil and mint. Its taste is fine and mellow, with hints of artichoke, chicory and lettuce. Bitterness and pungency are present and complimentary, with a sweet finish of almond and cinnamon.
