Censuré Château des Sarrins, a white from Provence
The name was chosen to spark curiosity: Censuré Blanc Secret 2015 Château des Sarrins. This white from Provence is made from Rolle grapes but is not part of the Côtes-de-Provence appellation.
If there is a winemaking area of France that Italian wine lovers are not particularly crazy about (aside from Bandol) it is Provence. It was launched as a tourist destination 50 years ago thanks to a celebrity spokesperson by the name of Brigitte Bardot and today continues to draw an incredible number of visitors.
Every year, Provence satisfies its visitors with enormous amounts of rosé wines that are as questionable as their quality/price ratio and which in part overshadow the few gems that exist of this type of wine. But then there are wines for which the aromas are important, others where the flavor counts and still others where the color is the drawing point. Besides, when one is on holiday they are not counting pennies. And then there are worse wines: in Côtes-de-Provence the whites are considered, in general, to be even less interesting than the rosé. The problem? The acidity.
But there are exceptions. Today’s wine, made from only Rolle grapes, is a lovely Mediterranean white. Censuré is a little sweet and because of this it did not qualify to be part of the Côtes-de-Provence (AOC) appellation and so was given this cagey name. The wine is made with great care but then this is no surprise given that Chateau des Sarrins is owned by Bruno Paillars, the top Champagne producer.
The estate, like many in Provence where the Mistral wind ensures a dry climate, is organic.
